Greek Salad Dressing

In my humble opinion, one of the best salads in the world is a so called “Greek Salad.” Full of crunchy cucumbers, tangy Kalamata Olives, juicy tomatoes and red onions. I usually use Romaine lettuce and top the whole thing with a generous, oh heck, a LARGE amount of crumbled Feta Cheese. This dressing tops it off so deliciously. Lots of garlic, oregano and a bit of lemon zest. Picture this dressing atop this salad. Yummers!

Greek Salad Dressing

Tart, tangy, herby and garlicky. In other words, perfection! Let it rest an hour before serving to blend the flavors.

Servings 1 Cups

Ingredients
  

  • 4 cloves garlic pressed or finely minced if you must
  • 1 Tsp dried Oregano
  • 1 Tsp Whole Grain Mustard or what have you
  • 1/2 Cup Red Wine Vinegar Use Cider Vinegar in a pinch
  • 1-3/4 Tsp Salt
  • 1/2 Tsp ground Black Pepper
  • 1 Tsp Lemon Zest finely grated
  • 1 Cup olive oil Use a good quality

Instructions
 

  • Place all ingredients in a small bowl and whisk to form an emulsion. I also put everything in jar with a lid and shake away! * This recipe makes a darn good marinade for chicken too.
