Pecan Caramel Sticky Buns

These buns are so fluffy on the inside. Just delectable. The aroma of Cinnamon is so enticing and that Pecan-Caramel topping puts these right over the edge! It makes 2 cake pans full which is 24 Buns. Perfect for that special occasion group of special people. Count on a good 45 minutes of prep time plus time to let the dough rise twice, about 1-1/2 hours. I've broken this down into 3 sections. The topping, the dough and the filling. I think it's easier to read and work that way.

Instructions

  • In a small saucepan, heat and stir 1 Cup of Milk, 1/3 Cup Butter, 1/3 Cup Sugar and 1 Tsp Salt just until warm and Butter is melted. Set aside briefly.
  • In a large mixing bowl, combine 2 Cups AP Flour and the Yeast. Pour the above Milk mixture into the flour and add the 2 Eggs. With an electric mixer, beat this on low for 30 seconds, then increase to high speed and beat for 3 minutes.
  • With a large heavy spoon gradually stir in as much of 2 to 2-1/2 Cups Flour.
  • Turn the Dough out onto a floured surface and knead in any remaining Flour. You want to have a moderately stiff Dough. Continue kneading for 6-8 minutes until Dough is smooth and elastic. Shape into a ball.
  • Grease a large bowl and place the Dough into the bowl. Turn the Dough over so both sides are greased. Cover the bowl with a kitchen towel and set it in a warm place to rise. Let rise for about 1 hour until doubled in size.
  • Punch the Dough down and turn it out on to your counter top. Divide Dough in half. Cover the Dough and let it rest for 30 minutes. That's it for the Dough. Now let's make the Sticky Buns

Filling the Dough

  • In a small bowl combine 1/2 Cup Sugar and 1 Tsp Cinnamon and set aside. Melt 3TBSP Butter and set aside.
  • Now....take 1/2 of the Dough and using a rolling pin, roll it into a 8x12 inch rectangle. I actually mark off 8x12 with tape so I know when to stop! Brush this rectangle with 1/2 of the melted Butter. Sprinkle over the Butter 1/2 of the Cinnamon-Sugar mixture. It looks like a lot but it isn't. Sprinkle 1/2 of the Rasins over the Dough.
  • Carefully roll the Dough up jelly roll style starting at the long side. Slice each roll into 12 equal pieces.
  • Repeat this with the other 1/2 of the Dough.

Caramel Pecan Topping

  • Using a small saucepan, combine 2/3 Cup Brown Sugar, 1/4 Cup Butter and 2 TBSP Light Corn Syrup. Stir over low heat until Brown Sugar is dissolved.
  • Divide the Topping equally between 2 round 9 inch cake pans. Sprinkle each pan evenly with 1/4 Cup chopped Pecans.
  • Carefully place 12 slices into each cake pan. Cover the pans and set aside to rise until nearly doubled,about 30 minutes.
  • Bake at 375° for 20-25 minutes. Remove from the oven. They should look like this.
  • Place a plate over the top of each pan and flip it over so the Caramel side is now on top. That's it! Does that not just look out of this world delicious?
  • And the best part is that you have 2 full pans of these delectable Sticky Buns!
