Caramelized Onion and Herb Frittata

Slowly cooking the onions for 30-40 minutes until caramelized makes for one special Frittata! The addition of smoked Gouda really sends it over the top. I cook lots of onions at the same time because they will last a week in the fridge and the extras are wonderful served with grilled steak or on top of a hamburger. They freeze well too. Pre heat oven to 375 degrees. Generously grease a 10 inch oven proof skillet.

Caramelized Onions

  • Heat olive oil in an skillet over medium low heat, then stir in the sliced onions.
  • Cook onions for 30 to 40 minutes over medium low heat, stirring frequently to prevent burning. The onions should be very soft and a golden caramel color when done. Remove from heat and set aside.

The Frittata

  • In a medium size bowl, whisk the eggs until well combined. Dice the Canadian Bacon and the roasted red pepper, shred the Gouda and set aside.
  • Generously grease a 10 inch oven proof skillet. Sprinkle the Canadian Bacon and the roasted red pepper evenly over the skillet.
  • Spread the caramelized onion over the bacon and peppers. Sprinkle the sage and fresh parsley evenly over the onions.
  • Lastly, add the smoked Gouda. Pour the whisked eggs over the top, then place in a 375 degree oven. Bake for 20-25 minutes until the eggs are set. Test by placing a toothpick in the middle. It should come out clean.
  • Remove the Frittata from the oven and set the oven to broil. Sprinkle the grated Parmesan cheese over the Frittata and broil for 1-2 minutes until the cheese is nicely browned. Remove from the oven.
  • Let the Frittata rest for 5 minutes then cut into quarters and serve.
