In a medium size bowl, whisk the eggs until well combined. Dice the Canadian Bacon and the roasted red pepper, shred the Gouda and set aside.
Generously grease a 10 inch oven proof skillet. Sprinkle the Canadian Bacon and the roasted red pepper evenly over the skillet.
Spread the caramelized onion over the bacon and peppers. Sprinkle the sage and fresh parsley evenly over the onions.
Lastly, add the smoked Gouda. Pour the whisked eggs over the top, then place in a 375 degree oven. Bake for 20-25 minutes until the eggs are set. Test by placing a toothpick in the middle. It should come out clean.
Remove the Frittata from the oven and set the oven to broil. Sprinkle the grated Parmesan cheese over the Frittata and broil for 1-2 minutes until the cheese is nicely browned. Remove from the oven.
Let the Frittata rest for 5 minutes then cut into quarters and serve.
