Turkey and Gouda Monte Cristo Sandwiches

It never ceases to amaze me that you can transform 2 slices of bread, a bit of meat and cheese into something that is just delectable! Nice and crunchy on the outside, full of good turkey flavor and melted Gouda, this is one wonderful sandwich that can be made and cooked in a jiffy!

  • Place the eggs and milk in a pie plate or similar dish.
  • Whisk the eggs and milk together until well combined.
  • Lay the sliced bread out on a cutting board.
  • Spread the Mayo on 2 slices of bread. Spread the mustard on the other 2 slices of bread.
  • Place the turkey on the mustard and sprinkle the cheese evenly over the mayonnaise
  • Put the sandwiches together, then dip each sandwich in the egg batter. Sprinkle with a little salt and pepper.
  • Melt the butter in a large skillet and when hot, carefully slide in the sandwiches. Turn the heat to low and cook 4-5 minutes until golden brown, then flip them over and brown the other side for another 4-5 minutes until the cheese has melted and the bread is crispy.
  • Remove Monte Cristo's from the skillet back to the cutting board. Using a very sharp knife, cut each sandwich in half, then plate them. Serve as is or add some Cranberry Chutney/Sauce. A mug of hot soup is never a bad idea to round out this delightful meal!
