In a medium size bowl, whisk together the garlic, cumin, oregano, salt, orange juice, lime juice and Tobasco Sauce.
Thinly slice the pork, onions and peppers. Add the sliced pork to the marinade and let marinate 15 minutes to one hour. The longer you marinate, the heartier the flavor.
Heat 1 Tbsp canola oil in a 10 inch skillet until very hot.
Add the onions, peppers and the pork with the marinade to the skillet. Cook and stir over medium high heat for 7-8 minutes until the pork is cooked through and the vegetables are just tender crisp.
Heat the flour tortillas as per the package instructions. Spoon the fajita pork, onions and peppers on to the center of each tortilla. Top with sour cream and cheese if you like, fold over and enjoy!
Adding a side of nachos with homemade Pico de Gallo is never a bad thing!
Thanks for stopping by today friends. However you celebrate Cinco de Mayo, my wish for you is to celebrate with family, friends and good food! Until next time, journey on!
Hugs and much love from me,
