Greek Salad Dressing

Tart, tangy, herby and garlicky. In other words, perfection! Let it rest an hour before serving to blend the flavors.

Ingredients

4 cloves garlic pressed or finely minced if you must
1 Tsp dried Oregano
1 Tsp Whole Grain Mustard or what have you
1/2 Cup Red Wine Vinegar Use Cider Vinegar in a pinch
1-3/4 Tsp Salt
1/2 Tsp ground Black Pepper
1 Tsp Lemon Zest finely grated
1 Cup olive oil Use a good quality

Instructions

Place all ingredients in a small bowl and whisk to form an emulsion. I also put everything in jar with a lid and shake away! * This recipe makes a darn good marinade for chicken too.
