Double Chocolate Peanut Delights
For all you peanut butter and chocolate lovers out there…this one is for you! This is a dense cookie, flavored to the hilt with cocoa, chocolate chips, peanut butter and chopped peanuts. Oh yes! A cookie lover’s cookie. Dan can’t walk past the cookie jar without grabbing a couple. The dough is stiff, so get your strong arm out ,you’ll be glad you did! Pre-heat over to 375 degrees. Lightly grease baking sheets.

  1. In a large bowl with an electric mixer, combine the vegetable shortening, peanut butter, sugar, brown sugar, milk and egg.
  2. Like this 🙂
  3. In another bowl, stir together the AP flour, cocoa powder, baking powder, baking soda and salt. Give it a whisk then slowly stir it into the vegetable shortening mix. Take your time. It will be stiff.
  4. Finally, stir in the chopped peanuts. At this point you can cover and chill in the fridge but I usually don’t bother. I just go for it. Roll dough into approximately 1-1/4 inch balls. Place on baking sheets and flatten with a fork. You know, the old cross hatch way.
  5. Bake at 375 degrees for about 10-12 minutes. Remove to a wire rack to cool.
  6. Devour with a COLD glass of milk!
