Clare’s Green Bean Salad
I just love the crispy crunch of the vegetables in this salad! It may seem like a “different” combination of ingredients but I can assure that this is delicious. The salty salami, the tang from the mustard powder, the bite of the radish and the simple vinaigrette will have you making this over and over again! I like adding the hard boiled eggs as it gives just a bit of creaminess to the salad, but on especially lazy days, when I don’t want to boil an egg, I have left them out and I still love this!

  1. Cook green beans in a little salted water just until barely tender, about 5 minutes. Drain and cool. Place all ingredients into a medium size bowl and gently stir until well combined. Cover and refrigerate at least one hour until well chilled.
